recipe for Blueberry pie

This recipe is a great dessert to make in advance. They can be frozen or made fresh, a few days before the wedding.

Blueberry pie recipe

when using fresh blueberries always ensure that it is well washed as it may contain sprays.

You also don't know how clean the hands were, that sorted them during packaging.

4 cups berries -- fresh or frozen

3/4 cup Sugar

3 tablespoons Cornstarch

1/8 teaspoon Salt

1 cup Water

1/4 teaspoon Cinnamon

1 teaspoon Lemon juice

1 tablespoon Margarine

1 9" pie shell -- baked

Whipped topping or ice cream

Wash and drain fruit,

Add cornstarch (use heaping tablespoons with frozen fruit), salt, water, cinnamon and lemon juice. Cook and stir over medium heat until thick.

Remove from heat. Immediately add margarine and remaining fruit.

Stir until sauce is mixed with all of the berries and margarine is melted. Pour mixture into prepared pie shell.

Keep refrigerated until serving time. Serve with whipped topping or ice cream. Recipe

like blueberry pie can also be made with prepared tart shells, great for individual servings.
